Does rigor mortis set in on the heart?
Why do organs have to be kept at a low temp when being trannsported to the donor?
At what temp is the organ kept?

Any biological process slows down at reduced temperature. Freezing would be detrimental. Seems like ice used to be used or a temperature of 4 Centigrade. Just above freezing.
See Organ Recovery's Miracle On Ice (http://www.businessweek.com/innovate/content/dec2005/id20051209_626246.htm)
The above device also circulates fluids within the organ and transport device.
