I am sponsoring my parents for a B Visa. I do not have copies of my last 3 years's tax returns. Can a transcript of last 3 years' tax return suffice (be proof) that I filed on time or do I have to submit copies of last 3 years' returns?

You can use only last year copy plus updated bank statement. US consulate looks at evidence of ties to your home country more than anything else.
