I have a house that the meter is over 2,000 feet away. What would be the safest, most durable, and economical pipe to use?

Another possibility is type K copper. This would be the most expensive. I would silver solder the joints.
You also need to size the pipe for the expected pressure drop and flow rates. 3/4 may not do it for that distance.
It would be helpful to know what the maximum size of the pipe can be and the pressure.
It does need to be buried below the frost line and must be an approved material by the AHJ (Authority having jurisdiction).

I would request a 1" water meter and install 1"PVC for the service. Also I would want to know the PSI at the city main. If a PRV valve's involved you might have to adjust the pressure at the house. 2000 feet of "K" copper will set you back a hefty
