Dear Sirs,
I am applying a ceramic floor to an existing kitchen floor that has parkay.. Should I remove the parkay or is your product good enough to prevent cracking in the tile?

Not a good idea to install ceramic flooring over parque. Parque being a wood product will always expand and contract with seasonal conditions in the house; the ceramic tile over it will be effected to from this movement. You will probably always have a problem with grout used bedtween the ceramic tile cracking because of the movement underneath.
By the way, it isn't our product. You are not contacting the manufacturer of the product you are intending to use by coming to AskMe Help Desk.

Don't even think about it again. You can't install anything like tile over parquet. Remove the parquet and get back to use for more instructions on the best way to proceed.
Also tell us more about this room and how the subfloor system is built and with what materials.
I would reconsider using Unimat since there have been many problems in thepast with that product. It's possible they have it figured out by now? I'm not sure. I use and highly recommend Schluter's Ditra over Blanke's Unimat.
