Has anyone installed lock n seal laminate flooring over the top of carpeting? Is it even possible? The carpeting has a foam backing and is glued to a wood subfloor. Any ideas welcome.

I would remove everything down to the subfloor before installing the laminate, otherwise you are going to have a very springy floor.

When I installed my click flooring, I put down a moisture barrier on top of the plywood. I bought it at the same place as the flooring. It comes in a roll. Sorry, I probably just made more work for you.
Another good point with that flooring, don't use a lot of water when cleaning it. Damp mop only. If too much water, it gets in the cracks and between the laminate particles and raises the pattern.

Carpeting is too thick to be used as an underlayment for laminate floors. It will cause them to buckle and separate.

I think we already covered this. Yes, it wouldn't work with laminate on top.
