How long should it take a 51 year old woman to walk 5 miles?

Depends on how fast you are walking.

Seriously.

It will ultimately depend on your height, weight, fitness level and goals.

A good goal to start with is 15 minute miles. A healthy adult should realistically be able to do 12 or even 10 minute miles, at a fast walk.
