The primary difference is single phase motors are designed to operate on single phase electrical power (http://en.wikipedia.org/wiki/Single-phase_electric_power) and 3 phase motors are designed to operate on 3 phase electrical power (http://en.wikipedia.org/wiki/3_phase_power).
