This looks like it may be the wrong area but just installed new corian counter-tops and would like to have a polished finish. Is there any way to do this?

If you want a high polish you should try micron graded abrasives. Specialty tools is one source:

I'm not sure if rottenstone, that is used to rub wood finishes, would be fine enough or not. You might have to use fine pumice first.
