Do you remove the string before you cook the roast, or after you cook the roast?

I've always cooked it with the string on... It keeps the shape...

Yup leave it on or it will collapse and over cook

Will untieing my pork roast make the flavors I am slow cooking it in absorb into the pork roast more?
