I have a hanging light in my kitchen. The light blew out (too high wattage bulbs were in it) and the wires are charred. Can I get new light "sockets" and just rewire it to the light?

If the wires in the fixture box are still in good shape, you should just be able to replace the fixture.
However if the wires in the fixture box (hole in the ceiling) are charred, then you will want to repair those as well.

You can try to find a single replacement socket but it may be tough not like the old days. I suggest to shut off power and remove old socket and take that with you to a big box stores and if they don't have it then its to a real electrical supply house us contractors go to. If they don't have it in stock maybe they can order it for you.
That is about all you can do other than getting another light.
