If the tenant has signed the entire lease documents and was given permission to move in and then the property manager and management company refuses to sign the lease document and has asked us to move out by sending us a two week eviction notice. Do we have a leg to stand on in court or should we move out by 12/31/08?

I personally would love to know the answer to this one. It sounds like a landlord, real estate agency and management company (is this a condo/townhouse/new development?)) all rolled into to one. What exactly did this lease say? Which one gave permission for the tenant to move in? And How much money was exchanged?
