Which direction do you turn the wall valve-cutoff to turn on and off the gas?

I don't know about the rest of the World but mine is counter clockwise to open, clockwise to close.

But it's a fireplace valve. Does that make a difference?

If it is what is called a appliance gas cock it will have a flat area to put a wrench. When the flat area is in line with the pipe it is open and when it is across the pipe it is closed. See picture on page.

Mine has a sort of handle like you would find on an outdoor water line - ? A round handle.

Most valves with a round handle open up when turned to the left (counter clock wise.)
