I have an "older" GE dryer model DDE8508MBLWH. It's considered older because of the dark colored drum. It has a habit of shutting off during the drying cycle more or less randomly. A press of the start button will resume the cycle. On average it takes 2 or 3 restarts to complete a cycle. Any ideas?

There is an end switch on the motor that powers your dryer. The end switch is a centrifugal type switch and they can become erratic causing your problem. If someone is handy at your household they can remove the motor and blow out the lint which sometimes causes problems with that switch. If that does not stop the problem then a new end switch is in order if you can find one.

It is also a slim possibility that the door switch looses contact part way thru the load and another slim chance the contacts in the timmer could be bad. Since I am not there to test it I have given you the possibilitys.

This list shows the motor switch as available BUT the prices they charge are way too much. You should be able to find this at a electric motor repair shop much cheaper.
