Only the Exchange admin can fix that error. Does your company have a tech support number or email?

Here are a thread with solutions that you may want to investigate:
Your Out of Office settings cannot be displayed, because the server currently unavailable. Try again later.. - TechNet Forums (http://forums.microsoft.com/TechNet/ShowPost.aspx?PostID=3555579&SiteID=17)

Sorry, I am not an Exchange specialist.

Not an admin myself, but I can share my personal experience with this exact issue.

I use Exchange Server with MS Outlook. Whenever I want to activate/deactivate my Out of Office feature, I have to access my email account with a Web Browser using the web interface. I can't use my local copy of Outlook to do it.

On the web interface, it works perfectly. And it then applies to my local Outlook as well, so I've just gotten used to doing it this way.
