I am an ex-felon who is also a chef. I am not at the level of skill that I desire and would like to apprentice under a chef of reputation. I prefer Ireland because I have family friends living there but I can't seem to get a straight answer on whether it is even possible or who I could contact that might be willing to take on an American apprentice. Will the Irish government even allow a non-violent offender do something like this?
