I was going "81" in a 65. What are the Punishments, Im a minor about to be off probation in a week

California, and it just said I was speeding, no wreckless driving or anything worse

I tried finding the fine for going 15 miles over the speed limit but all I found was DUI fines.

You will get a fine probably at minimum $80. + court cost
And most likely some points on your record.

Thinking of more of a 200 dollar file, but you pay a fine, it adds points to your license ( depending on prior tickets)

And what's the probation officer going to think of this?

From anything I ever heard it doesn't affect your probation unless maybe your charges that got you on probation involve a traffic violation. At least in my state a simple traffic violation is a citation/summary offense.
