About a year or so ago, my mom was losing her house. She came and asked me if I would be willing to buy a house in my name for her, and after a year, she would buy it from me. I have never been able to really say no, and unfortunately the obvious happened, she's now losing this one too.

Here's my problem (other than that) my g.f. and I recently had a baby and would like to buy a house of our own. We were thinking that because of the crap with my mom, for now we would just put it in her name. Well, after talking with a mortgage lender, we found out we can't include ANY of my income if we do that, only hers. She only makes 8.15 an hour, they told her that with that income, we can only get financed for $60,000. I guess my question is, even though my mom is currently losing her (my) house, can I still go on the mortgage with my g.f. and if I can would that actually help make it so we can get financed for more?

Odds are you will not be able to get a mortgage. At least not an affordable one. The mortgage your mom is defaulting on will go against your credit and inhibit you getting a new mortgage.
