surrendering passport to check into european hotels

do you have to give your passport to the front desk clerk when you checkin to any european hotel or can you show them your passport and give them a paper copy? I always feel uncomfortable with a stranger holding my passport overnight. I don't know if they just want to make sure I pay my bill the next day or if the police require them to provide a list of all foreigners staying in their hotel.
