Quitclaim Deeds

Is a quitclaim deed for house and property legal if it was dated 7 years ago and was never filed? My parents may enter a nursing home and it is my understanding that their assets are counted for the past five years. We do not want to lose the homeplace to the state and cannot afford to pay for their care. Any suggestions?
