Water heaters are shipped from the factory with the temperature set at 120 degrees. You didn't say so I'm assuming you have a electric heater.
If you wish to change the temperature setting, first remove the bottom inspection plate and you will see the thermostat,(see image). You may change the setting there. Good luck, Tom
