| There are good and bad bacteria. Milk is pasteurized (heated) to kill the bacteria. This takes care of most of the bacteria but not all of it. The problem is once you bring the milk home, you open it and bacteria from the air, your hands, even the glass you put in in gets into the milk. Since you don't know what kind of bacteria now been introduced into your milk, once spoiled it is kind of risky to drink or use. The smell from spoiled milk is caused by the bacteria eating the fat and protein. I understand what your saying, of course, about cooking with soured milk, but I personally believe, there is some risk. |
