About yogurts.

hello, I am presently working on my Science through Independent Studies. But I have to work on an experiment about a yogurt making. Basically, it's about answering the question to my experiment, but I haven't found one. I am not sure if this one is a good for my experiment...What causes the yogurt to develop and expand during it's reproduction and process?
Any suggestions?
