What is the best practice for managing inventory of seasonal products

I am trying to determine what is the best way to understand sales trends, or manage inventory of seasonal tomatoes from Isreal to the UK which are available for only 12 weeks of the year.

What systems of materials management/inventory control are best suited to provide optimum advantages to meet supply and demand.
