    Increasing to 200 amp service
    Can one just replace the 125 amp panel box with a 200 amp panel box?

    Yes and No.
    Yes, if the main breaker used is 125 amps
    No, if you don't upgrade the entrance cable, meter socket etc. and it's required.

    The other case is the service cable, meter socket etc is rated for 200 A. This is not likely.
    The utility MAY also have to upgrade it's service.
