Removing and replacing old insulation

I am replacing the bad boots on my roof. they leaked in three areas, 2 baths and kitchen. The attic space above the bathrooms has the insulation and it's very old. I'm starting to see mold on the ceilings and I need to take out the old insulation and get rid of the mold, it's not bad yet. It's not the rolls, it's the loose sprayed stuff.

A. Should I do it myself with garbage bags or have someone suck it out? Is this expensive?

B. Should I put sprayed back or the rolls.
