In my experience, yes, you can install the tile over Sheetrock in a bathroom, but it is preferred that it be a kind that is water-resistant. However, in a tub, shower or other area where there will be a lot of water or moisture of some kind, it would be best to use Wonderboard, Hardibacker or other cement-based backerboard of some kind.
There is a special Sheetrock or drywall material that has a protective, water-resistant coating that can be used for the walls of a bathroom. It is called greenboard.

There seems to have been some controversy in the use of greenboard and the application of tiles on it. Some like it and some don't. I don't really know that much about the controversy.
It also would be a good idea to be looking into what the code for your area might be concerning what you would like to use as a wall material, if you might have put up a new wall.
