Depending on what the conviction was for, I think you'll find that the policy varies from institution to institution.

Just be honest and take it as it comes. Some may ask about convictions "within the past 7 or 10 years; in that case you don't have to mention it.

If they ask for ANY convictions, be honest and disclose it. Yes, it will be a negative, but hopefully your grades/knowledge, and the way you present yourself to the institution, will outweigh it.

Yes you have alot to worry about.

For example, I work with elderly and handicaped people, our business has to be licenced by the state Medicare office and the state board of Pharmacy.
By medicare rules, you can not have any felony conviction and be employed by our company. We have to do a background check in every state you ever lived before we can hire you. Even one felonly no matter how old, you could not even be considered as a janitor.

So most health care institutions that deal with and are licenced with Medicare would have to have simular issues.

So depending on what field you go into, I would also check to see if you can get your licence or state certification with this on your record before you start and pay for the school.
