I'm not clear as to when you transplanted your rose bushes. Nor, the steps that you took in doing that. Or, where you live. That makes a difference in how I would answer your question.
The fact that you say they are about 7 feet tall now makes me think that you did not cut the canes down to match the length of the roots. That also needs to be done before a transplant. They will grow back to their healthy height.
I am assuming that they are looking a little sick would be normal after a very recent transplant. This would be normal because the plant would be trying to conserve moisture in itself during a transplant.
Again, I don't know when you transplanted them and the steps that you took in doing that. Or, where you live.
