Maple Tree Roots

I sure this has been asked many times, but I havn't been able to find an answer. I have maple trees in my yard that the roots are coming out of the ground. Can I cover these roots with top soil without hurting the tree? If so, how much dirt can I use to cover them. I thought I have read somewhere that you only want to go so far up the trunk of the tree. Thanks in advance,
