Mini Pumpkin Custard Tarts Recipe

I need a recipe for 3" (2 1/2 ounce) pumpkin tarts. I'll be making 500 of these for Thanksgiving dinners at church. I don't want to make crusts for each little tart, just make the filling. What I really need to know is the amount of each ingredient for the filling. I think I can wing the oven temp and time.

How are you going to manage the tarts without the crust ? Custard needs extra special care, so making 500 will be really difficult. I would do in batches of 50. You can normally make 20 at a time easily. From a baking standpoint, I think you are 'biting' off more then you can chew and may end up with a disaster. Why dont you just make pies ? Math was never my strong point, so I would never try to figure out how to adjust recipes to accomodate batches of a mixture which I think can only be accomplished in a commercial kitchen equipped to deal with that many small tarts.

We have a commercial kitchen at church with 6 commercial ovens. There will be 15 of us making the custards and they will be baked in 3" aluminum disposable pans. The mini pumpkin custards will be delivered to people in the community who are not able to get out or cook their own Thanksgiving dinner. So, it's important that we do them a day or so ahead and that the boxers can just grab the appropriate number of desserts and place them in the box. Cutting pies and placing each slice in a container, sealing the container and placing them in the box adds another 4 hours to this dinner prep. Believe me, we've tried it both ways.

I am pleased you are well equipped and already know the ropes for bulk baking ! I used to run a catering business, so know what that kind of work intails.
