Does anyone know how to twike a window ac to be used in a homemade walk in cooler

Not easy to do. If you replace/bypass the thermostat to get colder air, your condenser will freeze and air won't circulate. If you totally dehumidify the air in the cooler and recirculate it, the very low humidity will dessicate whatever is in the cooler.
