how do I hook up my vcr to record with my satellite dish

Sat output to VCR input. VCR output to TV input Should do it.

shouldn't be hard... instead of running the satellite receiver directly to your TV, route it through your VCR first... then from the VCR to the TV. I assume they all use RCA connectors these days (the red, white, and yellow cords)
