| I see no problem with it, looks like a good use of the 200 amp service now just for the pump.
You may want to consider using #4/0 Aluminum instead of the #2/0 copper, one to save a ton of cash, but more importantly reduce voltage drop. If you have a 100 amp load in the shop, the #2/0 will produce a 10 volt drop, which is more than the recommended 3%. If you use #4/0 Al for the same load and distance, the volts dropped will be about 3.5 volts, well below the 3%.
The feeder to the subpanel should be 4 wire, and at least one ground rod will be needed to ground the equipment ground at the subpanel. Keep the neutral and equipment ground separated at the subpanel.
