3 Sub Panels on a 200amp main ?

I am building an addition and I have already put in a 125 amp sub panel in it and ran #2 feed wire to the main panel box.I plan on only feeding it with a 60 amp breaker from the main and I already have a 100 amp sub panel feeding my kitchen and a 60 amp sub panel feeding my shed is this to many sub panels for my 200 amp main?

You can add as many sub-panels as you want, but you must consider the load being served from those sub-panels. Meaning: You should do a demand Load Calculation before adding any new loads, so you can make sure you are not overloading your main.
