New puppy acting out when not next to us

We just brought home our 10wk old Weimaraner girl three days ago. She's already partially toilet trained (most of the time she knows to go on the newspaper that's set down for her), but if we try to leave her alone for 10mins she acts out and pees all over the place. Is it too early to try and train her to be by herself? We let her sleep on the bedroom floor on her bed, but last night she was crying before peeing on the floor and then forcing out two separate big poos in the space of 20 mins. I can understand one poo, but two?! She had access to the newspaper at this time too. Should we just put up with this so she learns or is this behaviour a little to extreme? She also whines if she can't sit next to us on the couch.

I'm not currently working, but soon I will have to go back to full time work. That could be next week (hopefully not), or in two or three weeks. Does anyone have advice? Hopefully we will get a crate for her soon so we can try that, but if I am out at work for 8 hours, do we leave her shut in it or maybe keep it open in the bathroom. I'm hesitant to let her whine and whimper for too long for fear of annoying our neighbours. Any advice on new puppy anxiety or puppies and full time work would be appreciated.
