even if she is no longer an employee she can still be charged? I thought embezzlement was over 10000?

An exact change depends on the state law where you live, embezzlement in some states can be merely one dollar. Also other states may not even have an embezzlement charge, but it may be theft, or grand theft in other states.

But yes, if your state has an embezzlement charge, if she stole while an employee, they can be changed with it anytime till the statue of limitation. They do not have to be an employee at the time of the arrest.
