dropping aggrevated from and assault case

My fiancee was accused of aggrevated assault by his wife at that time. After she made the accusations she tried to drop them but the state of texas picked up the case. she was threatened with deportation for falsifing a police document so she changed her story again. he was arrested and was told by the prosecutor that the best deal they would offer was 10 yrs probation, 300 community service hours. It was his word against hers and he was told that a majority of the time that the men lost and had to serve 5 yrs or more. He signed the plea. He made matters worse by not completing his the minimum required service hrs monthly. he has already served 90 days for violating probation (because of service hrs), and now is serving 3 yrs TDC for violation again because he was accused of racing on a public street. He was told again that his chances of winning were slim if he fought and could hav e been given more time, again he signed. what i want to know is 1) if his ex-wife signs an affidavit that a weapon was not involved, can the aggrvated be dropped now? 2). what are his chances of being paroled after doing 50% of the time? 3) we found out that his ex's intention was to make the accusation and apply for a program so that she can get her citizenship. Is there something that can be done to prvent this and prove it?
