what to do with potatoes that turn to mush when boiling

First boil it in water without removing the skin.

Then after boiling, remove skin and cut/slice/dice as needed.

Mash them!
There is nothing better than a big plate of mashed potato with some red meat.

Pour a litle gravy over or mix in some cheese for extra flavor

I agree. Mash them. You can also add some eggs to them later and make potato pancakes out of them, if you would like.

Oh well, I just assumed the OP meant what to do to avoid getting potatoes mushy while boiling.

Potato filled pastries is always an option.
