What would happen you ask? It just won't rise up in the oven and will be a flatish bread. Still quite edible, my dear, still quite edible. I make stuff like that and have actually forgotten to add the baking soda and it still came out edible.
Like the time I made a cake and forgot to beat the eggs into the mixture. The cake just had two hard boiled eggs embedded in the cake. Still edible but funny looking.

Oh OK :P I have everything I need except the baking soda, and we don't get paid till Thursday, in which while our bananas are nice and brown now, but still firm, they will be liquified by next week ;) hehe.
Thanks :D

Oh I forgot. You can freeze your bananas and make it next Thursday if you want to. I have frozen bananas before and they defrost just fine.

DO you have raisins and walnuts or pecans?
It won't raise without the baking soda but with raisins and chopped nuts it will make it moister. I hate banana bread without the raisins or chopped nuts because it is much drier.
You should be able to use a little baking powder instead.

Here is a great banana bread recipe that I love.Made with bisquick.
You don't need any baking soda and it is super moist and so easy.
Bisquick is a little pricey so you can substitute it with Jiffy mix

Ooo thank you artlady! I have bisquick :D (the heart smart one, I don't think that makes a difference though does it? )
I don't have baking powder either. Or nuts or raisens. Its right before payday lol so we are pretty much scraping the bottom of the pantry ;)

Hay arty :) you asked on another thread how my bread turned out. Sadly I haven't done it yet. My hubby ate the last of our eggs  lol
But I froze the bannans ;) till payday when I get more hehe.
However, I DID find out from my mom, (which isn't the worlds greatest baker, so feel free to tell me if she is wrong ;) )
She said that there is already baking soda in my flour because I have all purpose self rising flour. So is that a good thing? :D
(if you can't tell I Don't bake. Ever. I'm a dunce at baking. I don't even make cookies. I buy premade dough. And eat half the dough myself before cooking it I might add... bad for me... I know ;) )

No,all purpose does not mean that. You still need the powder for rising but do try it with Bisquick,It is the best really,so moist!
You will never go back to the flour one and its also very light, just delicious:)

Baking soda reacts to temperature, which makes the bread rise, so if you don't and baking soda it won't rise, but if you double the mixture (and you don't mind having a rather dense loaf) it will be about the same size as the original recipe :)

You can also try using baking powder. Just experiment and see which works better for you.

Andriean, please read all the posts in the thread. Someone already suggested baking powder, Jennie is out of that too. When it's almost payday and you are running low, there isn't much left for substitutes. :)

Read the directions on the self-rising flour. You should be fine using that.
