| Divinity Salad
1 20-oz. can crushed pineapple, drained thoroughly and juice saved
2 8-oz. bricks cream cheese, softened
1 13-1/2-oz. Cool Whip
1/2 c. chopped celery (optional)
1/2 c. chopped walnuts (optional)
If necessary, add enough water to pineapple juice to make 1 c. Pour that into a medium-sized pot and heat. Add and dissolve softened cream cheese. Stir energetically until a smooth mixture results. Cool.
Mix crushed pineapple with celery and nuts. Pour cooled cheese mixture over pineapple and blend. Fold in Cool Whip. Pour into serving bowl or mold. Refrigerate at least 3 hours. Serves 6 to 8. |
