Hair: Curls disappearing

I'm 40 and white with thick, dry, coarse, "wavy" hair. All attempts to go natural have made me look freakish, so after washing/conditioning (once a week) with salon-grade moisturizing products and using salon-grade styling gel, I blow it dry (still coarse), straighten and style it with a curling iron (smoother), and hair spray it into place. I KNOW this only dries it out more but it's the only way I can tame it, and I have a great stylist and manage to produce an attractive "do."

My problem is that lately, after only a couple hours, the curls start uncurling and by lunchtime only some vague, dry waves remain and I look like a hippie and basically terrible. This happens whether on the 1st day after wash or the 5th. I have a full face so I need some length; short hair isn't an option.

I used to get my hair chemically straightened but haven't in some time because it's really hard on the hair. I've been straight-free for over a year, and didn't have this problem 6 months ago. Until recently I could go even a couple days with one curl-job. Now I'm the Straw Lady.

Where are my curls going?? I just started work in a museum that's high on air conditioning and low in humidity. Something tells me this is all about texture; it's all about being too dry, I think. I quit using Redken Smooth Down when I started washing less often, because of potential oil buildup. Still, that was months ago and things were fine until recently.

Need help! New job, unruly do, funky textured hair, lots of wasted time in the morning.

I have very thick coarse wavy hair also and I have used for years..
'Beyond the Zone' pro formula "Noodle Head"

I used it when my hair was down the middle of my back and now that it is shorter. It holds everything in place, and depending on how much you scrunch gives you the waves and or curls you want. Mine lasts till I get up the next morning.

If I don't wash my hair (which I don't everyday because of my hair) all I have to do is spray with a little water and dry and scrunch again the next morning.
