can i change my mind after I've reafirmed my car loan and my bankruptcy has been discharged?

Do you mean about reaffirming the debt? or about the bankruptcy ?

But once it is over and final discharge, no you can not go back

What if they never sighned the reaffirmation..am I still held liable for the debt..or can I let the car go back?

If you reaffirmed the debt, then you still owe it as it wasn't discharged in your bankruptcy. If you haven't "changed your mind" in writing withing 60 days of the reaffirmation, you are now bound by the terms of the contract. They can repossess the car, sell it at auction, and sue you for the balance if you default.
