I dont think he ever has built a rollercoaster. I know he is famed for many skyscrapers and bridges that somewhat resemble them. This is a list from wikiedia of his architecture...

what rollercoasters that Santiago Calatrava built

Even though someone has already answered me.The person said Santiago Calatrava didn't build any roller coasters but in a magizine it said he built a roller coaster but it didn't say which. I would like to know which roller coasters he built or helped build. Thanks

In this site: Santiago Calatrava: The Unofficial Site it shows pictures of his works and a roller coaster is not in there. You can check his future projects, but it does not show a roller coaster there either. From this site: Santiago Calatrava - Google Image Search
you can see all the projects he has worked on.

Now there is a hotel that he was going to do, that had some simliarities to a roller coaster:
