Down draft in kitchen needs replacement

Can any tell me how to replace the piping for a down draft cooktop. My house has the kitchen on the second floor with an island cooktop. I have noticed some greasy build up coming from the joints of the pipe that lead to the outside. Any suggestions?

Thanks,

Michael
