I work as a waitress at Applebees. I was wondering how many hours they can have us working without a break and how long our break is required to be?

If in the USA Federal labor laws do not require them to give you any break or even a dinner/lunch break. If they give you a break or dinner they are not required to pay you for that time either. Your state might have stiffer laws, where are you?

A law requiring breaks should be in here (http://law.justia.com/missouri/codes/2005/t18/c290.html) I think. I don't see it.

Ah. Says right here:

Missouri law does not require employers to provide employees a break of any kind, including a lunch hour. These provisions are either left up to the discretion of the employer, can be agreed upon by the employer and employee, or may be addressed by company policy or contract. http://www.labor.mo.gov/DLS/General/breaks.asp
