why does my unit run for about 10 to 15 mins overheat and cut completely off and never start back up? I just replaced the compressor motor and fan.

If you have the knowledge to replace all those parts correctly and did the compressor install as per manufacturer requirements then you probably have a open high pressure switch. if that is the case you did not do the compressor install correctly.
