All right, I know I answered this once. Where'd it go? (It's not even showing in my list in my profile. Weird.)

Any time you want to know what percent something is OF something else, you divide the two things in order. i.e. you've already had 800 calories today and what to know what that is as a percent OF your calorie allotment of 1500, then you do 800/1500. First thing divided by the second.

This works for anything. Gross profit as a percent of sales is just gross profit divided by sales.
