How to avoid going through someone else?

Is it possible to have my 10 month year old son adopted by my fiance without the consent of the biological father?

Unless you can prove that the biological father is unfit in some major way, you can not have his rights terminated for an adoption without his consent.

and most states won't allow a fiance to adopt---get married first.

Talk to a lawyer. An attorney will walk you through what you need to do to have your HUSBAND adopt.

However--if you're just doing this because you don't like the bio dad, and the bio dad is up to date on child support and tries to be a part of the child's life---it won't happen.
